There are people who enjoy the wonders of cooking and those that dont. I personally like to cook. I grew up in a household where both parents worked and my brother and I learned early to fend for ourselves in the kitchen. We would both experiment coming up with creative new ideas to traditional dinners recipies. The tradition still continues to this day. This is a recipe I usually save these for Sunday morning breakfast with the kids, but Pancakes don’t have to be just for breakfast, heck, breakfast isnt even just for breakfast anymore (Thank you man who invented breakfast for dinner).I found a recipe online and added a little food network know-how and came up with this recipe. Definitely a keeper. These fluffy little numbers were turned out as good as they looked.

1.5 cups of allpurpose flour
3 teaspoons of backing powder
2 tablespoons of sugar
1 egg
Lots of blueberrys (i managed about 3/4 of a pint)
2 cups milk
1 teaspoon of basil (trust me)
1 tablespoon of melted butter
Mix flour, baking powder, sugar, eggs, milk and basil until blended, then stir in the blueberrys. For an experiment I tried chopping up cold butter and stirring it into the mixture. The little chunks of butter became little bursts of butter flavor when they melted. Pour batter into a large skillet on med ium heat. As soon as the pancakes get bubbles on top, flip the cake. let the pancake cook for another minute then, plate the cake. Top with butter, blueberries and syrup. The End.
Makes 6 – 8inch pancakes (perfect for a pair of late night breakfast for dinner junkies )
